homemade vegetable spring rolls
Makes about 20 rolls.
Slice the following in very thin strips for the vegetable filling:
1/2 of one cabbage
3 scallions
3 carrots ( I just slice it up with a peeler)
1 zucchini- only slice up the hard parts, leave out the soft center and seeds
Mince and mix together the following for the sauce filling:
1 red pepper-this is the only vegetable that should be boiled for 1 minute
3 garlic cloves
3 tablespoons fresh ginger (or dried ginger power)
2 tablespoons sesame oil
3 tablespoons soy sauce
3 tablespoons toasted sesame seeds
3 tablespoons cilantro (optional, a lot of people think it tastes like soap, sucks to be them)
salt, black pepper and red chili pepper- to taste
Put about 1 tablespoon of filling in every roll.
We fried half and ate the other half fresh. If you’re going to fry them use vegetable oil, they fry-up nicely in less than 1 minute each side.
